Sweet potatoes are the best! Ten million times better than regular old plain potatoes. That unique flavour that only sweet potatoes have is AMAZING! So naturally, since sweet potatoes are so awesome, I had to come up with a recipe for something involving sweet potatoes. I decided that sweet potatoes are the most delicous as FRIES!
Since sweet potatoes are so sweet and delicious, they had to be combatted with something herby. Here comes the delicious blend of herbs I used for these sweet potato fries, that you might have sitting in you pantry right now.
Salt
Pepper
Rosemary
Dill Weed
Parsley
Tarragon
Chives
Who knew making such a delicious herb blend was so easy?

These really are perfect as is or as a snack or appetizer. They are the perfect side dish to any barbecue, but are also great just for snacking on!

- 6 sweet potatoes
- 260ml (1 cup) olive oil
- 1 pinch of salt
- ¼ tsp black pepper
- 1 tbsp rosemary
- 1 tbsp dill weed
- 1 tsp parsley
- ½ tbsp tarragon
- ¼ tbsp chives
- Preheat the oven to 200 degrees C (400F).
- Peel the skin of the potatoes, and cut into even rounds.
- In a large bowl, mix olive oil and all the herbs.
- Toss the sweet potato rounds in the mix, two sweet potatoes at a time.
- Arrange the fries in a single layer evenly on a baking sheet lined with aluminum foil.
- Bake for 20 minutes then flip, cook for another 15-20 minutes. You'll know they're done when the edges are brown and crispy.
- Remove from the oven and wait for them to cool down.
- Serve plain or with your favourite dip.
