Herby sweet potato fries baked to crispy perfection. Simple, healthy, fast, and filled with herby-sweet flavor! Just 8 ingredients!
Ingredients
6 sweet potatoes
260ml (1 cup) olive oil
1 pinch of salt
¼ tsp black pepper
1 tbsp rosemary
1 tbsp dill weed
1 tsp parsley
½ tbsp tarragon
¼ tbsp chives
Instructions
Preheat the oven to 200 degrees C (400F).
Peel the skin of the potatoes, and cut into even rounds.
In a large bowl, mix olive oil and all the herbs.
Toss the sweet potato rounds in the mix, two sweet potatoes at a time.
Arrange the fries in a single layer evenly on a baking sheet lined with aluminum foil.
Bake for 20 minutes then flip, cook for another 15-20 minutes. You'll know they're done when the edges are brown and crispy.
Remove from the oven and wait for them to cool down.
Serve plain or with your favourite dip.
Notes
*If you like less or more herbs just adjust the amount to your taste. Measurements given are optional and you can play around with how much herbs you would like.
