LEMON AND LIME DRIZZLE CAKE

This delicious cake has a fluffy base, and an amazing lime drizzle.
Ingredients
  • Ingredients:
  • 1 tbsp lemon curd
  • 1 tbsp baking powder
  • 75g butter
  • 150g self raising flour
  • 2 medium eggs
  • 2½ tbsp full fat milk
  • 125g caster sugar
  • For the drizzle:
  • finely grated zest and juice of 2 limes
  • 4 tbsp Granulated sugar
Instructions
  1. Preheat the oven to 180C and butter a loaf tin.
  2. Beat the caster sugar and butter together until it is light and fluffy.
  3. Add the milk, eggs, baking powder, flour and lemon curd mixing at all times until it is well combined.
  4. Pour the mixture into the loaf tin evenly and place in the middle of the oven for 40–45 minutes. To test if the sponge is fully cooked insert a skewer in the middle of the cake and if it comes out clean it is ready to come out.
  5. Poke holes in the cake with a wooden skewer
  6. To make the drizzle mix the lime juice, zest and caster sugar together and pour over the cake whilst still hot.
  7. Allow to cool and enjoy!
