Lemon bars… so classic and delicious. But have you heard of passion fruit bars? The tropical passion fruit replaces the lemon and enhances the bars. Convinced yet?
Phenomenal passion fruit bars made with only 9 ingredients and wonderfully amazing!
The crust is made with just butter, sugar, vanilla extract, salt, and flour. Mix it all together and put it straight in the oven! It is so easy to make and is buttery and rich.
The filling is so wonderful, luscious and delicious. It takes eggs, sugar, passion fruit puree, and flour. For the passion fruit you can buy either buy frozen pulp, or if you’re lucky enough to find fresh passion fruit pulp or passion fruits, you can take the pulp and sieve it, to remove the seeds.
These passion fruit bars are soooo incredible and you are going to love them! They are creamy, delicous, tropical, luscious, simple, and wonderful!
These breathtaking passion fruit bars are perfect for a dinner, lunch, or friendly gathering. You can also just eat them as a sweet snack! (I’m warning you though, make 2 or 3 batches just in case)

- For the Pastry Crust:
- 170g unsalted butter melted
- 75g granulated sugar
- 2 tsp vanilla extract
- ½ tsp salt
- 180g plain flour
- For the Filling:
- 8 large eggs
- 350g granulated sugar
- 265g passion fruit puree
- 45g plain flour
- Preheat the oven to 180C/ 350F Line a 33x23 cm / 9x13 inch pan with aluminum foil so that it extends up the sides, and spray the foil with nonstick cooking spray.
- In a bowl, whisk together the melted butter, sugar, vanilla, and salt. Once mixed, add the flour and stir until combined and no streaks of flour remain. Scrape the dough into the pan and press it into an even layer. If it seems a bit greasy it is fine.
- Bake the crust for 25-30 minutes in the preheated oven, until it’s golden brown on top. While the crust is baking, prepare the filling.
- In a large bowl, whisk together the eggs, granulated sugar, and passion fruit puree. Sift the flour on top of the egg mixture, and whisk it in as well.
- When the crust is done baking, slide the rack part-way out of the oven. Pour the filling over the hot crust and slide it back into the oven. Reduce the temperature to 170C/ 325 F and bake for 25-30 minutes. It’s done when the center barely jiggles when you tap the pan.
- Once done, remove the pan from the oven and let it cool until it reaches room temperature. For the cleanest cuts, refrigerate the bars and cut them when completely cold. To cut, remove the bars from the pan. Use a large sharp knife and wipe it off often between cuts. Sprinkle the top with icing sugar before serving. Store passion fruit bars in any shut tight container in the refrigerator for up to a week.
